At the bar, conviviality and know-how with Stéphan

La Baronnie ‘s team looks after evrything, and gives the best of herself at each moment, which does not prevent individuals to express their particular talents. Then, let us open doors on this private life of the Hotel and meet all those who are the major actors. Right now, we’re going to the bar, where Stéphan is waiting for us.

Strong-willed for great references

Loving travels and relation ships, Stephan is 39th years old and he comes from the beautiful city of Nice, his native area. Add to that, he is a vegetarian and sports person and you have some informations on this man for whom communication is spontaneous. At first, Stephan didn’t specially want to become a barman, but he excels in the job and his curriculum is rich of renowned establishments. Take for example the « Hôtel Belles-Rives » (Juan les Pins), « Château Eza » (Eze), « Le Mas de Pierre » (Saint-Paul de Vence) or the beach bar of the mythic « Hotel Martinez » (Cannes). As many references which mean real excellence. So nothing special that leaving mediterranean shores, Stephan came to the Atlantic ones and La Baronnie Hôtel & Spa****.

Expert in his job

Stephan is not the kind of people who likes to stay waiting behind his bar, on which he also appreciates the decor as well as the whole house. Immediatly seduced by the story and the harmony of this place, Stephan has a huge preference for the garden’s bar « the most beautiful » as he says. So, it’s with a real pleasure that he took up the place, focusing on the atmosphere, specifying that « ensuring transformation and development of the bar is a goog challenge ».

The Bar’s menu ? After going off exploring the stock kept in the 13th century arched cellar, the menu has been refreshed and Stephan has put on it some of his own creations.

His favourite coktail ?

Precisely a creation called « The Gossip » composed with « midori » liquor (infusion of Asian melon), 3 years old Havanah Club, banana, pineapple juice and also freh pressed lime. Discover it at La Baronnie’s Bar of course !

An advice to people for doing coktails at home ?

« Always give the favour to quality ». Stephan insist : «  good bootles and products, fresh pressed lime or orange, and everything wil change ! ».

Let us end by what our barman especially likes in his job and it’s very simple : giving some pleasure to his customers : « when I come with the tray and discover their satisfaction in front of the polished presentation with some of that little details which are making the difference, it’s a real reward for me ! ».
